Cape Clear Distillery to launch a Lavender Gin

An unexpected surprise
Every new enterprise, no matter how well researched, involves a leap into the unknown. And sometimes, the results come as a very pleasant surprise.
Fortunately, this was the case when Mike Daly returned to the Island very recently to find a second lush and abundant crop from his lavender plantation, just below the Cross. With no time to louse, in case of a sudden storm, it was all hands-on deck for the harvest.
All of which opened the door for some exciting new product development.
Our Cape Clear Lavender Gin has been formulated by Distiller Corentin Simon to bring the aroma and flavor of Cape Clear Lavender to the World. Happily, there has been no shortage of volunteers for the testing phase and because of the excellent feedback the product recipe is progressing very well indeed. We expect the first commercial batch to be distilled shortly. However we shall have to wait some time yet for the bottles and labels to appear.
The work of many
‘’Ní neart go cur le céile” and much of the recent progress was enabled by efforts by Joe, Mairtín & Ger to distil the first essential oils produced from Cape Clear Lavender. We show the beautiful new still secured by Joe for this purpose.
